Because cauliflower is delicious on its own, and when baked in larger chunks it has an amazing texture and sucks up the flavour of anything you cook it with. It's by no means a meat substitute but if it's in a vegetarian recipe it's almost certainly going to be the meatiest ingredient there.

Ricing cauliflower robs us of all that joy.

Buffalo cauliflower is pretty much the only thing I do with my air fryer and it's soooo delicious every single time. Even just steamed cauliflower is good if it's not steamed too hard.

Admittedly I've never tried it mashed. I'll have to see if I can hunt down a good recipe and go from there :o Sounds interesting and honestly the only horrible cauliflower thing I've ever experienced is those pizza crusts made from it x:
