I've lived here for years now after years of fighting my way out of my home state/city.
So far it's been everything I wanted it to be 20 years ago. Green, Diverse, beautiful seasons, small business friendly (as much as capitalism allows in the US) and the highest percentage of people I've ever seen who share my beliefs of fun aesthetics being important and that queer/POC people deserve to live. Hot take, I know.

But wife and I were recently staring at comments on stupid food serving methods in restaurants which claimed "this must be Portland", "this is so Portland" "leave it to Portlandians"

After looking into these places, Not only were none of those images from places in Portland (hell some weren't even from the United states) but NOTHING ABOUT THEM SCREAMED PORTLAND. I think the accusation is just a tone-deaf response to even the vaguest presentation of culture or queer people with healthcare. I'VE NEVER after years of happily trying new and fun restaurants in this city, ever run into a $200 deep fried 6 piece ravioli on a clothes line with wooden hangers. I have also seen the commercial bastardization of what "hipsters" are (an already capitalism created glomming together of "we don't know how to sell to you") used and exaggerated in ways that are harmful to gender expressions and POC/allies. Well..I guess I answered my own question. That's who it is, isn't it?

Tl;Dr: Please stop throwing marginalized people under the bus for the restaurants that new money millionaire tech bubble workers go to.
