seconding Kino's Journey, high quality nonbinary motorcycle kiddo content <3 I watched the 2003 anime, I saw one episode of the 2018 reboot and it seemed like they were trying to lean it more action-y which wasn't really my jam :/ fair warning, the show's vibes range from "chill (warm and soothing)" to "chill (solitary and meditative)" to "this town is kinda fucked up huh" to "I am fighting for my life" to "traumatic queer childhood", go in prepared. i'd say most of it is pretty chill overall though.
also, this isn't an anime and isn't exactly "chill", but Shimotsuma Monogatari (released in English as "Kamikaze Girls") is a fun weird coming-of-age movie about a girl who loves lolita fashion and a girl who's in a biker gang. it's real cute and wacky, highly recommend.
Kino's Journey is essential, both versions; the newer one is much longer and less consistent to my memory, but really pretty.
Amanchu is a super chill show, and one of the girls does ride a bike but mostly only around the same seaside town.
There's a motorcycle propaganda anime about a high school motorcycle club called Bakuon that has the one awful fanservice segment found in all anime about high school girls in Japan, but is otherwise the single most honest depiction of riding a motorcycle to exist in any form on the planet.
They tackle some real motorcycle culture\safety stuff, and really play up that the cool part of riding is that you're goin' places.
Like, it's fun and over the top but god dang they really did their best to be shockingly real about a lot of antics. Like firing your lasers!
