This stream is a pretty great way to get more familiar with the process of composing using music notation software (and just composing in general), which is something that's been a bit intimidating for me. I'm keen on doing more orchestral stuff, but not that keen on trying to wrangle a DAW into playing it back nicely.

Oh so that was you who popped in! So glad to have you!!

Your improv is really strong, as far as getting more familiar with 'composing in general' I think a great step for you is to simply write out the things that you play. Then in the moments you're like 'I wish I did something differently there,' well, on paper you can! =)

If you already have notation software, great! If not, there is a free version of Dorico you can mess around in, and if you want great orchestral sounds, NotePerformer gives wonderful results right in notation software without a lot of extra hooking-up. You can rent-to-own NotePerformer for about $11 / mo! (I just finished paying mine!)

Good luck and have fun! Thanks again for watching my little stream =)
