Wow, an image based train sim is one of the oldest concepts for how simulations might work. A half century ago, the Southern Pacific & Santa Fe both developed two different analog film versions of this to train their locomotive crews. Here's a fascinating history of it here:
Oh my gosh, the details on this are so on point (both the ramen restaurant and the video). We have a Kaiten sushi restaurant in our city that instead of the usual sushi train layout has a to-order row style thing, and when your order arrives, it arrives at-speed behind a first gen Shinkansen (it has incredible braking control, so no need to worry about the beers sloshing). Obviously it's a bit of a gimmick, but it really does just light up a part of my brain when I see stuff like that.
