Might not be beginner friendly, but I use the obsidian app to write notes with folders and hyperlinks. That way, I can organize my notes like a Wikipedia page with branching links.

Sort of like the below structure, but with many branching paths.
Info about country > info about city > info about locations in city

I also use a syncing software so I can write these notes on my phone or laptop and it doesn't matter where. Obsidian has a paid sync feature, but I am cheap so I use a free OneDrive account.

if you're doing it online I find google's jamboard handy, lets my players take notes where each other can see (and I can see, so I have a better idea of what they're interested in/paying attention to)

This is maybe pat advice but I’m all about keeping a dedicated physical notebook. Write a checklist before each session of all the beats and hooks you want to remember to drop, sketch out your maps, jot down quick reference for npcs and monsters and what have you. I just think better on paper.

I just have an unorganised group of Google Docs. Best thing I can tell you if to make a quick reference sheet for important Npcs and stick it to the back of your DM screen. Sticky notes for shit you need to look up frequently (potion prices, inn prices etc) on the back of your DM screen has been a life saver for me
