I'm struggling to remember who it was who said it, but the best counter I've seen to this specific argument goes "If you're using generative AI to fill in the gaps in your writing, the difficult-to-write bits where you need to get character a to location b for the plot to work, than you're going to have a problem because it's terrible at that. Same with dialogue, same with pacing and structure. About the only thing it can do decently well is give you a starting idea of what the story should be, and if you need AI to do that than maybe writing isn't for you."
