I accidentally made fried chicken with some gluten-free panko and it was -surprisingly- delicious. I think it was 4C, in the black canister. Even crunchier than usual, a surprisingly neat texture! I tried it by accident years before I realized that when I stop eating flour I -also- stop having brutal heartburn and gut issues every time I eat.
panko makes a good base for fried chicken to begin with and you can get gluten free pretty easily. You can get flour gluten free as well, but it usually is going to come in a very large quantity, so the panko is probably more reasonable. (that said, my favorite breading is a 50:50 panko four mix with like a teaspoon of powdered sugar it)
