going to cook some meatloaf with caramelized onions and im going to actually take the time to properly caramelize them as best as i can. ive only done it one other time before, every other time i do it kinda cheaty and theyre not as good. i figured meatloaf is nutritious and filling and not crunchy so i wont have to worry about my stitches. the only other thing ive eaten today is a yogurt and an english muffin, so like, i should probably eat something more filling since fed is best and i barely count as fed today (im so foggy from regular brain fog+infection brain fog+painkiller brain fog+hungry brain fog that i keep undressing completely to use the bathroom (ive done it twice now today ffs) when im absolutely not showering.

the one im making is french onion meatloaf! so you just make a normal meatloaf however you like it, then top (once cooked) with mozzarella and caramelized onions. i might see if i have some stuff for au jus (i think i have a packet mix of it, not ideal but w/e, i dont have wine) and make it more of a french dip style meatloaf as well. maybe just mixing some of the au jus into the meatloaf before cooking.. much to consider

Caramelizing onions takes soooo much patience! I've barely managed to do it maybe a handful of times and have a lot of cooking experience. Wishing you the best with it! (And hoping you can get some soft foods for the short future with your stitches. :S πŸ’œ)
