Tonight's dungeon dinner was pork Katsu meatloaf with carrots, zucchini, and coleslaw. Unfortunately for everyone I'm a big coleslaw guy, especially if I make my own. I followed a recipe for this one but I didn't really need to, it was pretty straightforward and i dont feel like looking it up again. I'll summarize it under the cut. I think I overcooked the zucchini a bit, it was a little too mushy, and maybe undercooked the carrots, hard to tell. In any case, I inhaled it. It wasn't a five star epic win meal, but was tasty. I think I prefer just straight up katsu instead of this, though I do like this more than run of the mill meatloaf. I need to come up with my own katsu sauce that I actually like. This was a bottled sauce, and I've made my own by hand off some recipes, but none ever really hit the mark, maybe I can find a restaurant dupe recipe.
Pork (or ground meat/meat substitute of choice. I don't think you can wholly veg-ify this unless you use like a meat substitute). like 1 lb
panko ~1/3cup per lb of meat
katsu sauce about yeh much [cups one hand]
ketchup, a squart
soy sauce, like a take out packets worth
green onion
salt +pepper
(the veggies are shredded slaw mix, carrots, and zucchini. The slaw dressing is mayo, katsu sauce, lime juice, salt and pepper)
Mix the pork, panko, and as much green onion as you want, i used the bottom half of two green onions (i put the top halves in the slaw). salt and pepper that bad boy and mix mix. slap it on a pan in a vague loaf shape and bake at 450f for like 20 mins. you can also put a tray with the sliced veggies in. salt and pepper thos veg too.
mix a glaze of katsu sauce, ketchup, soy sauce, and salt and pepper. brush it on the loaves at 20 minutes and put them back in for ~5. While you're waiting, take the batteries out of your smoke detector because your shitty apartment oven Will Not like the amount of things I'm baking in it. Pull em out and presto! meat lov
for the slaw mix a squart of mayo, lime juice, a lil katsu sauce, and s+p then dump in the slaw mix and green onions and shake it up.. slaw babey!
