Tonight I made these mushroom burgers and they got me pregnant for real. These are so fucking good. amazing! I also paired them with roasted brussel sprouts with hot honey dressing and sweet potato fries and a garlic aioli that i stirred some of the mushroom topping liquid into. Also I made the burgers with lamb burger mostly bc it was weirdly on sale vs beef but was an excellent choice! I have only cooked with wine one other time before (as liquid for a slow roast) so this was a treat!

I thought a lot about "effort" with cooking. I knew making these burgers would be a lot more high effort compared to most of the meals I cook (Frankly I hate the process of cooking burgers, or really any kind of meat that isn't just ground or thinly cut. I should invest in a food thermometer bc I was surprised to discover I don't own one). But I really wanted to cook them. I splurged on nicer ingredients (the buns were an 8 pack for $8, the lamb was about $8 for 4 patties, the gouda $4, and the aioli was a couple bucks too. I only bought a little sampler wine bottle, so I didn't go all out on that). I really wanted to make sure I made these as good as I could. I spent over an hour on the whole process, I really made it count as best as I could, and it came out so delicious. Absolutely worth the time, money, and effort to do something well. I want to try making my own sourdough bread and buns sometime soon
