It's not a picturebook (which I think all of those are) but My Father's Dragon was one of the first novels I read probably and I have very fond memories of it

Cross Country Cat, a story about a cat that can ski. Still own my copy when I was a kid.

The Snowy Day still gets to me every time I read it. A simple adventure for a young kid, telling his mom about them while she helps get him into a bath, and the sad dream followed by the wondrous confrontation with his friend the next day. Perfectly mundane and beautiful.
