I don't play MTG but I think if I were to design a card for it based on myself it'd have an ability that's along the lines of:
Once per round, prevent an opponent from casting a spell. When this ability is used, [Entropy] restores 1 health per mana the spell cost, up to its maximum. The spell and the mana it would have cost are discarded.

not sure what the health or damage would be though

maybe it's one of those funky reversible ones. like the 'normal' state (what it starts as) has that ability, and then a condition that makes it flip if it eats enough spells.

something like this:
Entropy, Arcane Devourer
(see above). When Entropy, Arcane Devourer consumes a spell, add a token. When the number of tokens on this card reaches 10, transform into Entropy, Prime Earth Elemental and remove all tokens.

Entropy, Prime Earth Elemental
Spells do not affect this card. If brought to 0 health, transform into Entropy, Arcane Devourer.
When attacking with this card, roll a 6-sided die. If it lands on 6, create a forest. If it lands on 5, create a mountain.

Just for shits and giggles, I'm going to put these in actual MTG terminology.

(Front face)
(Tap): Counter target spell. Prevent the next X damage that would be dealt to Entropy this turn, and put X charge counters on Entropy, where X is equal to that spell's mana value, then if there are 10 or more charge counters on it, remove all charge counters from it and transform it.

[Translator's note: Tapping a permanent is a way to make a cost payable once per turn per permanent tapped. Also, damage on creatures only sticks around until the end of the turn, so I changed the healing effect to a prevention effect.]

(Back face)
Hexproof
If Entropy would die, transform it instead.
When Entropy attacks, roll a d6:
1-4: Do nothing.
5: Search your library for a basic Mountain card, reveal it and put it on the battlefield tapped, then shuffle.
6: Search your library for a basic Forest card, reveal it and put it on the battlefield tapped, then shuffle.

[Translator's note: Hexproof is sliiightly different from being unaffected by spells. It makes it so that the creature cannot be a target of any spell or ability your opponent(s) controls.]
