(The whole post had me rolling with each pop-reference horse)
I had similar trials with Ostrich (IIRC; I was trying a lot of uncommon U.S. meats at the time) where I felt stew originally was the right move but it was just like "No, low-and-slow, this bird is L E A N." Then I just made steaks (it was also fine.)
Horse is still on the list though. Thanks for the experience!
