I think my new MO for longfic writing is to just write the entire thing without publishing the chapters as I write so I don't feel weird or bad about how long updates take and I can just schedule regular updates (lying).

Honestly a little bit! My fics as they are don't get much engagement, although there could be a lot of factors included in that (slow update rate, people preferring completed works, how often the tag updates, the popularity of the ship, etc). Having a slow update rate is actually pretty demotivating if I'm being honest.
As for the fic idea... teehee ummm I want to write FF fic now, I wonder why (already up to my knees in two WIPs it's fine it's fine it's fine)

I genuinely don't know why you want to write FF fic now. Why? (Rebirth?)
Definitely for new stories. For what's currently published I just want to get chapters out as fast as I can manage.
And yes I do want to get FF fic out because of Rebirth and it makes me SICK that I do, because I'm a #Hater and there's something : / about the idea of new FF7 fans who are only exposed to the remakes.

The good news is that the remake still isn't done and there's at least one more part they have to do so you've got time.
But yeah, I know what you mean. Mostly I'm thinking about what a headache looking at fic on AO3 will be if people don't tag the remake(s) specifically.
