Last time we cleared the entire first page of tracks. So why not just tackle the second page next? That way it's all 3-starred for when the new DLC tracks get added.
Plus, I still feel like I'm missing some kart components and I figure the only solution for that is to continue to make like Wario and collect as much coinage as I can to unlock it all. Or, at least, for all the pieces that can be gotten that way.
