  • For those who are both: I've done both substitutions at the same time! It's not Perfect but it totally works and tastes good and is nice cake.

GUY FAWKES DAY CAKE

One 8-inch square cake

Also called parkin, this not-too-sweet cake is the traditional gingerbread of northern England. Perfect with a dollop of whipped cream.

Preheat the oven to 350°F. Grease an 8-inch baking pan.

In a saucepan, melt and stir together:

  • ½ cup (1 stick) unsalted butter
  • ⅔ cup molasses

Remove from the heat. Whisk together thoroughly in a large bowl:

  • 1 cup all-purpose flour
  • ⅔ cup old-fashioned rolled oats
  • 1 tablespoon sugar
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • (1 teaspoon grated lemon zest)

Add the melted butter mixture to the dry ingredients alternately with:

  • ⅔ cup milk

Stirring just until the dry ingredients are moist. The batter will be thin. Pour into the pan and bake until the cake begins to pull away from the sides of the pan, about 35 minutes. Let the cake cool in the pan on a rack.

Liz notes: If you want to make this cake Fancy, you can also add chopped candied ginger or citrus peel! Yum!
