I'm so excited
(I have fossilized bread and I'm craving cabbage and I love beans so it's going to be some kind of ribollita-like soup)
it's ribollita, more or less! probably my favorite vegan-by-default soup!
I added a rutabaga and a Parmesan rind because I had one lying around and I'm not planning to feed this soup to anyone else. I'll be honest, though, at least by smell I don't think it's really improving anything and the non-vegetarian drawback is real. I will obviously report back when I eat it with further thoughts!
