when I went to NYC a couple weeks ago for the Most Unwanted Music show I was looking for good cafes and found one called Black Fox. the coffee was the best coffee I've ever had in a cafe and I don't want to devalue that by talking about the food so I wanted to mention first that in no uncertain terms the coffee was the best coffee ive had at a cafe.
but I was killing time and reading a book waiting for my Amtrak and got some food, an olive oil lemon bundt cake, and it was really good, and so when I was asked to bring dessert to a 4th of July party, I thought "hey that lemon cake was good, make that"
pretty soon after searching for recipes I came across a claire saffitz video from just a few months ago for exactly what I was looking for! knowing food stuff, and cafe people, whoever is making the Black Fox menu is keeping an eye out to people like Clair for recipes like this to miniaturize for the cafe. or olive oil lemon cakes are in the ether right now and I haven't noticed (or it's a coincidence, but it never is in the food biz)
well I made the cake as 2 loaves, accidentally used too much sugar but it turned out great anyway. wasn't really meaning to post or anything so I didn't grab a cross section but I was just thinking about the cake and how good it was. anyway here's the video, the recipe Claire makes is good for exactly 2 loaf pans if that helps https://youtu.be/KhGI83cHJgo

btw I'm a fairly experienced home cook but essentially a baking novice and I found the recipe to be no fuss and minimal mess

Thanks for sharing the link! I'm always interested in finding cakes that have less dairy in them, so a good olive oil cake sounds like it'd fit the bill for the next time I can find the flour

Like a lot of folks my partner and I really got into baking over the pandemic and Claire Saffitz recipes are basically the only ones we tried that we consistently go back to. Would really recommend both her cookbooks as well!
