i've got a cafelat robot that's been my main way of making coffee for years. i typically just drink straight espresso, in a typical-for-manual-levers long ratio, about a 1 to 3 (18g of coffee in, 56ml out) in about 25 seconds.
in the last month or so I've been doing more pourovers because i finally found a recipe that works for me, which is high extraction low agitation. 5 equal pours that i let drain fully before adding my next pour. the fresh boiling water is really efficient at extracting the coffee so you don't need to stir or swirl, which means the filter doesnt clog with fines, which means you can grind a little finer. i use a flat bottom brewer for this but i cant imagine that's very important.
