It's Marvel, I know, but Loki just finished, and it's basically entirely about time travel and interesting layers I haven't seen in a lot of other time travel media. There's an interesting take on time travel within time travel there.

There's, of course, the time fuckery ultra bullshit that is Homestuck. Multiple timelines all cross interacting, etc.

It's only brief, but late in Kill Six Billion Demons, (spoilers) Solomon David stops time, then uses a technique called Stopped Time Within Stopped Time (iirc) to make multiple duplicates of himself to make multiple attacks against his unassailable foe.

Those are the weirder ones off the top of my head.

I also like more local interpretations of Time manipulation like in Wakfu, where even the most powerful and dangerous time manipulator, using the entire power of a peoples' life force, only jump back 10 minutes, to the ruination of his life's work.
