In one of those "I have GOT to get rid of pantry ingrediants" moods so I made goulash. Still had to run to the store for a couple things and saw some goat milk gouda. I still got Heidi, Girl of the Alps on the brain so I thought I'd try topping the goulash with it and it did not disappoint!


Recipe for my own sake, this came out good and was kinda a hodge podge

  • Olive oil
  • 1 onion (small to medium)
  • 3 garlic cloves
  • 1 pound ground beef (80/20 chuck)
  • 1 28oz can crushed tomatoes
  • 1 8oz can tomato sauce
  • 1.5 cups chicken stock
  • Dash of soy sauce
  • Eyeballing amounts of Italian herb mix, plus extra oregano and basil
  • Salt to taste
  • 2 cups dried large macaroni
  • Like an ounce or two of shredded young goat gouda
  1. Dice the onion and mince the garlic. Pour a little olive oil on the bottom of a heavy sauce pan and turn burner onto mediumish heat. Saute the onion until soft. Add garlic and saute for another minute. Add ground beef and cook it down until fat is rendered and beef is browned. You could probably drain the juices but I didn't and it worked out real well.

  2. Pour in the crushed tomatoes, tomato sauce, chicken stock, soy sauce, and herbs. Bring to a simmer and cover with a piece of aluminum foil. Cook for 5 minutes or so, stirring occasionally when your soul calls for it.

  3. Uncover and taste, adding salt if necessary. Stir macaroni into the pot and cover, cooking for another 10 to 13 minutes until macaroni is cooked. Serve with cheese sprinkled on top.
