1. instructions on enabling the developer console:
On linux, the config lives at ~/.config/discord/settings.json, windows is mentioned in the post.

close discord, fully. On windows and linux this means right clicking it in the taskbar and quitting, or killing it from taskmanager/ killall Discord (case-sensitive)
2. enable developer options and other hidden menus:

Then go into settings -> experiments (in the same category as What's New) and search (at the top) for "Enable fancy super-alpha favorites server" and set it to 1.
Right click any channel, add to favorites server. Then remember to nickname it with the server it's from (right click a channel in the favorites server), or put them in categories before you add more, so you know where they're from.
