I think "X-forwarding uses local graphics" is mistaken in the current age: it does graphics calls locally, but since we haven't been using X primitives for 20 years, the only graphics calls it does are "render this bitmap we forwarded". As for rendering: i think DRI makes it so the crypto miner (which runs on the server) communicates with the DDX driver (which also runs on the server) ignoring the client entirely. And of course an actual cryptominer would just use CUDA and not bother with any kind of X interaction.
