I'm still on my first playthrough but disco elysium is a pretty good immersive sim.

it's got items, an inventory grid, your skills matter for everything; closing off and opening paths. there's a slot for bullets (but at this point I'm not sure if that's just to trick you).

it's got a grubby, not-quite-anywhere aesthetic, decayed cities, and the keystone of the immersive sim genre: competing grand conspiracies

you can stack boxes to then climb at least once in the first few days I think.

and it definitely has shooting mechanics, I haven't found anything to go in the bullet slot yet but I have caused kim's gun to shoot many times. and then have to load a previous save.
