Iirc almost all us grocery store meats that are not otherwise labelled come from animals fed an almost-entirely-corn diet. (Incl beef, pork, and chicken), so i'd guess it's more animal anatomy.

If you wanted to experiment, depending on where you live you might be able to buy some grass-fed beef. But that could be both expensive and wasteful.

Specific to mammalian meat is almost always alpha-gal syndrome. (Humans, apes, and old-world monkeys don't make that particular carbohydrate, but I can't imagine you'd get a chance to see if you react to that mammal meat.) A blood test can find it for sure.

Have you had any luck with turkey or chicken? my mom was officially diagnosed with alpha-gal syndrome last year and she seems to be able to handle eating those (and presumptuously other fowl) fine.

I saw in another comment that you're moving to another state with better healthcare, I hope it works out for you!

poultry and fish are fine except, inexplicably, yellowtail sushi.

impossible burger sets it off, presumably because their plant-derived heme is too good of a copy.

but it makes me curious if it's all mammals or just the common to eat ones. maybe I'll buy some game next time I'm at the butcher
