Because they're never making a thorough critique of the overall design of a game, they're just pointing at a thing they noticed. You can analyse and criticize the overall multiple ways a game signposts interactive elements. That's never what I see from those viral tweets though. They just point at yellow paint and shout "BAD". They noticed a small singular trope that's been used a few too many times and they ding it in their cinemasin style mental score as a bad thing because that's what they think media criticism is.

They sure love to bring up Souls games as shining example of respecting the player. Hey remember when there was discourse about Elden Ring's tutorial being easy to miss??? A TON of people didn't even see the tutorial when they played the demo. So the devs made it better lit. They added an additional ledge to make it more obvious it's safe to jump down there. They added a ghost AND a floor message that basically tell you "hey jump down there for tutorial" in lore compliant speech. And then guess what??? Fucking guess what happened next??? A fuckton of people still complained they didn't see the tutorial. So now the BELOVED ELDEN RING, who always respects the players intelligence, starts with a big fuckin text box that tells you "HEY IDIOT. JUMP DOWN THERE FOR TUTORIAL."

Elden Ring text box telling you where the tutorial is

Yeah every single environment could be incredibly well designed with intuitive yet immersive visual cues but games are time consuming to make, sometimes your game is an RPG focused on the combat system or a 3rd person shooter focused on dealing with huge crowds of enemies coming from all sides, and sometimes you don't have time to waste on a single climb interaction between two areas. Sometimes you just want the player to find the fuckin tutorial without any ambiguity so you can work on something more important.
