And I'm so happy this week is over. It's been a rough few weeks, as yall know. Looking forward to rest and finally getting that damn paycheck. Never thought I'd say it, but I'm fucking sick of rice and cheap pasta once or twice a day. I need a steak or rotisserie chicken. Mmmm fooooood.

I'll look up a recipe. I know about a billion ways to make rice, but that is a new one for me.
The way I do is:
- First of all put 4 cups of water to boil
- In another pan, fry a diced onion on a pan with two tablespoons of vegetable oil (medium heat)
- When the onions become translucent, add a few cloves of minced garlic and fry some more
- When the garlic looks good, add 2 cups of rice (wash it on water and drain the water beforehand) and stir with the garlic and oil for about a minute (increase to medium-high heat)
- Then add the boiling water and keep mixing while adding it
- Add 4 pinches of salt and mix it and then stop mixing, leave it be
- When the water level drops to the same level of the rice, put a lit on the pan and lower the heat to low
- Keep checking the water level (I use the handle of my cooling spoon to open a hole and peek). Once the water has completely evaporated, turn of the heat and put the lid on again and wait for like 10 minutes for it finish to cook in its own heat.
Bam, you got a few days worth of rice! You can store it in the fridge too, it should be good for a few days. It is better served with beans plus a "mistura" (some side dish that goes together, like salad, vegetables, meat, fried egg etc).

I wanted to say I get what you say but I would be lying, rice and beans are like THE daily staple Brazilian lunch base so not only I'm used to but I also quite enjoy it, haha
It was just bc I didn't have a choice. One day later, and I'm already craving some fish and rice.
