it did indeed bend. i ate it and it tasted cold but not uncooked. actually, it tasted overcooked -- overly mushy.
seems that it did indeed "cook", and that leaving it overnight was in fact too much cooking?
from this experience, i hypothesize the existence of cold brew pasta
