I'm a bit late checking through the cheese tag, but if I may humbly suggest some different cheese type ores/stones. Like a blue cheese block that might drop blue mold when you mine it, I think that would look cute in a cheese dimension.
It would also be neat to be able to age cheese, just like how copper ages in vanilla. You could even still put on wax to stop the process!
