Nice looking curry! I use 100% baking chocolate and either honey or pureed apple to get some additional depth of flavor in my own curry rice, along with the usual array of spices, garlic, and ginger.
Thank you! I'm right there with you with honey and/or fruit etc., but tbh I've strayed away from trying chocolate just because I'm not a fan. Didn't feel confident enough to really know enough to add it in, even though it's just flavors. So this is exciting that it turned out well with the chili chocolate, so might play with the baking chocolate next time!
I spent a while chasing the flavor of the cafeteria of the college I did a month study at from scratch, and then decided that enhancing S&B Golden was closer and more convenient. So now I start with that, use tonkatsu and soy sauce to modulate consistency, and use the aforementioned stuff for flavor.
Oooh, actually good (unintentional) call. I need to get Tonkatsu sauce.
Yeeeaaah, S&B Golden is just... way too good. Like cake mix, there's just some things that have been heavily scientifically optimized. 😂 But also good to understand the method from scratch too!
That looks good as hell! I like to add a bit of miso to meatless curry. Adds a ton of savory body to the spices without getting in the way. Gotta be more careful with the salt when I do that, though.
Oh, Miso! That's a great idea! I relied on Fish Sauce for the savory (sigh umami) flavors and did a bit of Greek Yogurt to build the body a bit more with a slight tang.
I'm gonna try Miso next time. I've had some left that I haven't been inspired to use in anything.
Have you tried both red and white miso and/or have opinions there? The grocery store near me just started carrying both so I've been thinking about experimenting.
I've only done it with white miso. I haven't had any red on hand to try it, but it'd be worth a shot.
I have red on me currently. It'll be a while before I try again buuuut I'm finna try.

It looks so goddamn good! Better than bullion makes a garlic base that might be worth a try. Maybe some miso and dashi? I've seen miso used to make savory vegan gravy
knorr vegetable bouillion or one of the veg flavors of better than bouillion are a good call to round out the flavors without meat (I always make mine with broth instead of plain water)
