At risk of sounding extremely unhelpful: from Italian, where the -zz- has the standard pronunciation "-ts-"
I think there's some background with shifting orthography and/or pronunciation from Latin, but I absolutely lack any expertise to say any further
Yeah basically this, though pizza is thought to be a loan from Greek pita into Neopolitan and presumably the i induced palatalization of the t to a [ts] sound which is the norm for Italian varieties
