i made huevos rancheros with carnitas, black beans, and fresh pico de gallo 😋
i was worried that i wouldn't like the pico because i have a hard time with fresh tomato but with the salt, cumin, and lime juice it turned out really good!

😭 There are few more kind statements that someone can say to me, to be entirely honest.
This is also why my partner looked at me yesterday and was like "Do you want me to pick up Mexican food tomorrow? We can get you carnitas." 😂 He knows me well.
Funny enough, my love of carnitas is directly tied to my love of nerdery cause my lgs is where I first tried them (weird story, lmfao). 🥰
