Homemade chicken noodle soup!
Still can't locate my crock pot, so I made stock on the stove for just a few hours. Roasted a whole bag of chicken bone leftovers*, including a leftover rotisserie chicken (good flavor add). I roasted the bones, some unused baby carrots, celery, onion, and a whole head of garlic under a broiler. Besides adding some good roasted flavor, it saves a lot of time, as the pot doesn't have to heat it up.
Finished it by pan searing and cutting up some chicken breasts, and cooked the onion, carrots, and celery in the pan to pick up the fond. Noodles were store bought - just no energy left for making my own 😭
AND THE POOR FOCACCIA! The house is far too cold for bread to get a good rise, so I usually put it in a warmed oven. I put the bread in the oven that was just used to broil the veggies and bones, and I'm pretty sure it killed the yeast. Made for okay dipping in the soup, like a giant bloated cracker, but RIP to some real bread o7
*I keep a Ziploc bag in the freezer and add leftover chicken bones to it. One gallon bag makes about a half a pot of stock.
