Short answer: yes, absolutely, you can
Longer answer: EotE might actually be BETTER for megadungeon than Classic Megadungeon Games, given that the way the world-outside-the-dungeon turns is already established (though not the specifics, despite how big Wookieepedia is), given that EotE has the built-in advantage/disadvantage on dice so as to remove a lot of uncertainty around embellishments and allow for very, VERY easy environmental intrusions even for players who aren't feeling creative at the time, given that every single EotE class has built-in options on their skill trees for "here are areas where you have a unique social sway or advantage", given that there's already well established presence of smugglers, pirates, various states, and other networks to interfere with you just "offloading the stuff at town" and just

yes yes yes yes yes and also this is where I'm personally MOST comfortable with the Starwarsian oeuvre, in the realm of rogue scholars and smugglers instead of everything revolving around Sacred Monastic Warriors Of A Certain Bloodline
