One of the other recipes from this weekend was a simple Dutch Oven bread. For this you will need:
A Dutch Oven
Parchment Paper
A Regular Oven
A Large Mixing Bowl
A Kitchen Towel
A Mixing Spoon
A silicone Spatula
Ingredients:
~ 2 3/4 cups Bread Flour
~ 1/2 cups Oats
~ 2 teaspoons Kosher Salt
~ 1 1/2 cups 37C (100F) Water
~ 1 satchel Active Dry Yeast
Directions:
1 - In the mixing bowl combine water, salt, and yeast, stir until fully incorporated.
2 - Add flour and and oats to the bowl, mix thoroughly with the mixing spoon. Use the spatula to scrape down the sides of the bowl. Cover the bowl with the towel and leave in a warm place for three hours. (If the house is cool, turn the oven on for just a few seconds to raise the temperature inside, then turn it off again and let the dough rest in the oven to rise. Take it out again and set it on the oven for step 3.)
3 - Preheat the Oven to 230C (450F). Heat the Dutch Oven in the oven during this process.
4 - Gently turn the dough out onto lightly floured parchment paper. Gently shaping into a loaf with the spatula to not lose too much gas.
5 - Take the heated Dutch Oven out of the Oven WITH POTHOLDERS and lower the parchment paper and dough into the Dutch Oven. Cover with the lid.
6 - Return Dutch Oven to the Oven for 35 minutes.
7 - WITH THE POTHOLDERS remove the lid from the Dutch Oven and bake bread for an additional ten minutes.
8 - AGAIN WITH THE POTHOLDERS remove the Dutch Oven from the Oven and turn the bread out onto a wire rack to cool.
9 - Enjoy the bread with butter or honey! (Or for dipping in Cholent!)
Why all the stress on the potholders? It's easy for the brain to trick itself into grabbing something it normally can even though you know it's hot. So... stress on the potholders to avoid a severe burn!
