Don't see why you would, it'll be like those Censorship Pandas from all the way back ago.
In dry legal terms, you shouldn't, cause the idea of PEGI is that you pay people to play through your game and assign a rating, and then other people trust this rating to be accurate based on PEGI's reputation of not getting these horribly wrong.
Not sure if they mind though, it's not like you're a movie or a videogame or what else they review over there.
There are also various self-assigned ratings like IARC or GameJolt's toy rating thing.
I know someone who actually did get a warning from a ratings board - although it was an officially sanctioned organization in that case, and she was using their official visual style & language in a way that was well-intentioned but unauthorized

IDK how that shakes out here since PEGI is a self-regulated industry body and you're obviously not trying to pass it off as official or applying it to actual published media, but I thought it was an interesting story to share, at least.
