the best sandwich is the friends we've made along the way
but also this one I make with rucola, sriracha, mortadella, and a bit of mayo

There’s this incredible sandwich shop that closed during the pandemic called saltie. When I first started working with artists I would finish a shift putting together email lists and painting gallery walls and walk two blocks over and order the Scuttlebutt. It had like 7 different pickled vegetables and this massive block of feta cheese on focaccia bread with olive oil and sliced radishes and scallions and seemingly whatever random herbs they had gotten recently. It was in Williamsburg while a bunch of artists were being kicked out of their studio lofts to make way for apartments for the finance Bros that ended up moving in, so it really felt like eating the absolute best meal of your life on the Titanic
