so hypothetically if I wrote like 3k words of pseudo-homage/sequel to a medieval Irish saga-text, pretty much by accident, over the last two days, what would I like. do. with that. is the question I am faced with today

I very much intend to! It's mainly a question of how much to write before putting it somewhere (luckily, this format of tale guides one there naturally), and where to put it (currently a toss-up between just using this site in its blogging capacity, and following your Itch example)
If it's got the right tenor, I think there are online sword and sorcery magazines (non-reactionary ones) out there. But Itch has its pluses, and from a drafting point of view there's lots to be said for pumping stuff out on a site like this one too.
That's a good shout! I might do something like those for my stuff that's written like modern fiction per se in future. This meanwhile is fully written in an approximation of (conventional (so outdated, but anyway) translations of) the style of the Ulster cycle so it feels more like something to put out there as an Object in and of itself for the six people who share this niche.
