I think the only food I am wistful for, out of everything hit by my pork ban, is tonkotsu broth. I like ramen a lot and a good broth is really killer; everyone's always raving about how good a quality tonkotsu broth is, which is twice as impressive when I consider that otherwise I never hear anyone talk about broths period. So it must be really good! And unlike some of the more overhyped pork options1 I haven't run into a comparable non-pork alternative.

I'm not nearly interested enough to break my ban for it. But. Would've been nice if things had worked out on that front for me.

  1. I was not born under a pork ban and tried a variety of porks Before, so I can say this with lived experience: bacon is not that good. But I promise that if you take me out for breakfast and I'm not feeling the other sides, I'll get extra bacon and you can have it all. :eggbug-smile-hearts:

in reply to @wobblegong's post:

I do like miso-based broth a lot when I'm not feeling tonkotsu, because the thing about tonkotsu is that while it's delicious, it's also super rich! I need to have skipped a meal to be ready for that.

If you want to get close-ish to tonkotsu you could mix a little cream into another meat-based broth. This is what a lot of ramen restaurants that are RIP OFF SCAMS do because they don't want to boil pork bones for 20 years.

If it's good enough for cheaters it might be good enough for me... thank you for the tip! :eggbug-smile-hearts: (I was aware that a lot of places don't make ~REAL~ tonkotsu due to the desire not to boil pork bones for 20 years, but I hadn't been informed of their choice of lazy workaround.)
