what tags do you already follow? mine are tags that pertain to my personal interests, plus the global feed tag (maybe more that I'll add to the list later)
It depends on what you like. I love cats, so I follow "cats". "Welcome to Cohost" shows me new people arriving and introducing themselves, which can be a good way to come across interesting accounts to follow, etc.
Seconding following "welcome to cohost" and "introductions" to find new people.
I think there are two approaches to following tags: following a few very active ones, like the global feeds, "#artists on cohost", and broad interests like "#indiedev" and "#music", or following a whole ton of less active tags for more niche interests. For the second approach I recommend just pouring your stream of consciousness into the tag search bar and following any tag that comes up. If you'd like to see it on the feed, follow it.
For example I followed the tags for every single band I like that someone had made a tag for on cohost, and even all of that combined doesn't generate much activity in my bookmarked tags feed.
