I’ve been trying to get around to making this all week but chronic pain and exhaustion kept saying ‘nope, not today’. Going for a spicy chicken and sausage gumbo with okra and some tomato too. I believe the tomato would make it closer to a Creole style gumbo? Still learning the important differences between Cajun and Creole cooking.
Still some things I'd iterate on for the next time I make it, particularly I think I like a bit thicker and spicier than it turned out last time, but even so this is such a flavor loaded dish. The okra and tomato definitely added some nice sour notes to the melody with all the other warm flavors that I'll want to have again.
And home made pickle on the side partly because I'll eat homemade pickles with almost everything, but also because they really compliment rich hearty foods like this well.
