Got up this morning and started a crock pot full of red beans and rice and a stock pot full of the veggie scraps I've been saving to make vegetable stock for soup with.. Before breakfast. This makes me an adult? Right? This is that 'adulting' thing I've heard of? Meh. It's going to be a lot of good food my house mate and I can eat for weeks.
Mostly following a recipe for red beans and rice from Kenneth Temple people's can check out here: https://www.youtube.com/watch?v=cSie0gBzsMI with some adaptations so I can cook it in the crock pot and take longer breaks sitting down in between steps. Also some minor changes like using half kidney, half pinto beans, and adding jalapenos because my housemate and I love adding heat to food.
Veggie scrap stock is something I picked up to do after seeing a short by Kwook? (Found here: https://www.youtube.com/watch?v=2Vs6doemmh4). Yes I know I have a bunch of things in there that a lot of advice on the net says are bad ideas for stock. I'm a strange woof who likes a lot of strong sharp flavors including the bitter from stuff like the cabbage cores that are in there somewhere.
