Everything gets eaten because I have guinea pig friends, nothing goes to waste
These are all the same dough from Claire Saffitz. These cookies are easily the biggest hit among my friends, and I've made it probably 10+ times now.
Anyway, we'll start with the first one - the GRILLED COOKIES. IT WAS A MISTAKE, THESE WERE MEANT TO BE THE CONTROL BATCH 
These got slightly burnt on top, the baking pan is still cold after 12 minutes, and the insides are raw.
I had to flip them over, snapping most of them in the process and losing about 5-10% of the raw dough since it stuck to the baking paper, and then grill them for another 5 minutes. 
They actually turned out pretty good. I was very surprised, and my partner really liked it. They had a nice, crunchy crisp exterior and and still kept a slightly chewy interior.

This version is everyone's favourite. It's got the perfect balance of crisp and chew and it also dissolves nicely in your mouth. The flavour really shines through from the natural peanut butter.
This is what happens if you use chilled dough:
It didn't spread properly and the cold interior sorta...ballooned up and forced the jam out. The texture is heavier and more doughy, because it has more moisture left inside. It's that underbaked cookie texture that a LOT of bakeries are doing nowadays. Not bad.
In the end, it's up to preference, but funnily enough, I quite enjoyed the grilled version...
