If you want to play a blue mage, Fabula Ultima is a J-TTRPG (JRPG+TTRPG) that has what is essentially blue mage as a class. You start at level 5 and can multiclass up to three times at character creation, so you can even customize what kind of blue mage you want to play. The system is really good, I highly recommend it!

That is an extremely cool idea. It strikes me that one place you could start thinking about it would be to consider a hack of lancer. I recently ran into a very cool fantasy hack of lancer that used the structure of mech licenses to build fantasy classes. You could very much do the same thing but turn them into enemies the player has fought and defeated. Obviously there might be lots of things about it that don't appeal, and you might just want to more organically build your game from the ground up, but if you wanted a toolkit to start thinking about lists of like, rewards and advancements and damage types etc etc etc it's always nice to start from a remade game and tinker around with it for a bit.
