Went to a relatively new restaurant chain the other day called Sichu Malatang, inspired by China's Malatang shops. It's basically a buffet line style place where you pick out ingredients for a custom hot pot, then bring it up to the counter, where you specify how you want it (with soup, stir-fried, or in a thick sauce), and then you're charged based on the bowl weight.
The place had what seemed like the whole spread of potential hotpot ingredients, ranging from various types of meat and seafood to a selection of different noodle types, mushrooms, and the whole array of different kinds of fish and squid balls in varying flavors. the balls were the most tempting, and just wanting to try one of each resulted in a shamefully heavy bowl when it came time to weigh in.
