I think your head shape looks normal. The game character one looks weird.
There's only one excuse for this kind of limitation in my opinion - it's there to make hair styles and accessories fit the standard model with little or no scaling. It's just like the "same model syndrome" in Genshin Impact - it makes it easier to reuse animations between characters.
Some more ambitious experiments with dynamic animations and accesories for more fluent characters creators failed or got cut out (see: SPORE).
When I was making myself in MLB the show I realized the problem was I had was that I didn't know what focal length the game was using. I had to go with whatever my phone camera was using which must have been different.
