You are correct - I knew this, that's part of why I was confused! XD
Pouring one out is literally to pour a beverage out in commiseration/toast/celebration for someone left/lost/gone/etc. You either pour a glass, and leave it untouched for the gathering, or you literally pour it on the ground (often done in the case of like, graves - extra-literally pouring one out for them.) Setting an extra seat at the table, even knowing they'll never be able to attend again, etc.
Your chost mostly hit the nail on the head with a correct description, which is why I was confused. :P
