Growing up I thought mushrooms were disgusting because my mom only used canned mushrooms and she only used them when we had spaghetti. Long story short, I love mushrooms now. So in honor of that, here’s the top 3 things I’ve eaten that feature mushrooms,

  1. The mushroom dumplings from Kargi Gogo, literally one of the best things I’ve ever eaten period. Kargi Gogo is gone now, but I’m holding onto the hope that they’ll come back. https://www.instagram.com/thiswaskargigogo/
  2. Pad see-ew from Kati, I pretty much get this just for the shiitake mushrooms. I don’t know what they’re marinated in, but it’s incredible. https://katiportland.com/portland-kati-portland-food-menu/
  3. Grilled portobello caps, there was a summer where me and my partner made these almost every week. If you really just get all the moisture out of them by letting them sit in a pan full of butter, they’re delicious. Bonus points if you dip them with some A1 sauce on the side. 😋

This sauteed mushroom recipe changed my life. They get so lovely golden brown and meaty and just ... 🤤

For a bonus trick: the first step with the water works with other liquids, or you can season the water, and the mushrooms will suck it up like a sponge. Just be careful with salt or strong flavors because whatever you add is gonna get hyper concentrated by the end.

I used to like to season the water with sage and paprika and pepper and use it as a substitute for the sausage in a sausage gravy to make it veg. Genuinely might actually like it more than the meat version, and I don't say that easily.
