I am hoping to make a cheesecake tomorrow morning. tell me something comforting about not needing it to be chilled for a full 8 hours before eating? Do you have a favorite cheesecake recipe? I like the sour cream glaze on this one, but I will use graham crackers instead of chocolate cookies.

I probably should have made it today, but I got my covid booster and flu shot yesterday, so I have been extra lazy even tho I don't feel too bad.

fwiw I do think it's pretty important to chill it for 8 hours before eating, but also only to make sure it doesn't stick to the pan a little when it comes out -- and it still tastes good even if it's not visually flawless!
